Can I set up automatic monthly loan payment options, and if so, on what dates?

Yes. The payment is drawn from the account you specify on the 15th of the month unless the 15th falls on a holiday or on a weekend. In this case the payment is drawn the next business day.

Will I be sent a statement and if so, how often?

Yes, a statement is mailed to you on the first of each month. It shows the account information, finance charges, transaction history and the minimum payment required on the 15th of the month. A coupon is included at the bottom of the statement that you can use if you want to make an additional principal payment.
